Port Wine Reduction
Bottle of Port
1/2 cup purple or red grapes
1/2 tbs vanilla
Pour wine in a medium saucepan over medium heat and bring to a boil. Continue to boil until thickened and reduced to about 1/2 cup, about 30 minutes. Let cool to room temperature then add 1/2 cup of sliced purple grapes and 1/2 tbs of vanilla and mix… serve over cheese cake of your choice! Cheers!

This week’s Foodie Friday features our beautiful Florio Marsala!
Marsala Chicken
Ingredients
¼ cup flour for coating chicken
½ teaspoon salt
¼ teaspoon ground white pepper
½ teaspoon dried oregano
4 medium skinless, boneless chicken breast halves – pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
2 cup sliced mushrooms
1/2 cup capers
1 cup diced onions
1 cup Marsala wine
2 tbs heavy cream
Combine flour with spices. Dredge chicken in flour and pan fry in butter and olive oil mixture. When slightly brown add onions and then mushrooms. Cook for a couple minutes and then add Marsala, reduce and cook until chicken is no longer pink inside and reaches 165 degrees. Turn off heat and add heavy cream. Serve over noodles of your choice or mashed potatoes. Garnish with capers and a lemon wedge

Equal parts Chardonnay, Pinot Noir, and Meunier, the NV Champagne Reserve Brut has the 2019 vintage as its base, with 25% reserve wine. It pours a bright silver straw hue with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish. It is a lovely entry to the range to enjoy now or over the next 6-8 years.

For Foodie Friday this week, we’ve got a beauty of a duo for your weekend enjoyment!
Honey Butter Old Fashioned
Ingredients
4 dashes Angostura bitters
1/4 ounce honey syrup (equal parts honey to water)
1 orange peel
1 maraschino cherry
2 ounces honey-butter-washed bourbon*
Garnish: 2 orange peels
Garnish: maraschino cherry
Garnish: honey butter biscuit (recipe follows)
Honey-Butter-Washed Bourbon: Slowly melt 1/2 cup of honey butter. Pour a 750 mL bottle of Clyde Mays single barrel bourbon into a container, like a mason jar, and gently stir in the honey butter. Leave the mixture uncovered until completely cool and the butter has become firm and risen to the top of the container. Freeze the mixture, skim off solids, then strain through cheesecloth to remove all solids. Cover with lid, label and date. The bourbon will keep for a few weeks.
Sour Cream Biscuits
Ingredients
• 2 cups self rising flour
• 2 stick butter, melted
• 1 cup sour cream
Directions
Preheat the oven to 400 degrees F. Grease miniature muffin pans.
Mix the flour and butter together, add the sour cream, and blend well. Place spoonfuls of the batter in the muffin pans. Bake until golden, 8 to 10 minutes. Brush with honey butter. Reheats easily at 400 for a couple minutes. Best served warm.

Rum Chicken
A wonderful Caribbean-inspired marinade for chicken that`s perfect for barbecuing. Pairs well with cilantro rice
• 1/2 cup lime juice
• 1/2 cup dark rum like Kraken or Captain Morgan’s Spiced Rum
• 1/2 cup olive oil
• 1/3 cup soy sauce
• 2 cloves garlic
• ½ teaspoon ground cinnamon
• ½ tablespoons grated ginger
• 1 habanero
Put in blender or food processor
